simple make ahead dish for CFS patients with comany coming


4 skinnless boneless chicken breasts (or 1 per person)
1cup white seedless grapes cut in half
4-5 stalks of celery
about 4 tablespoons mayonnaise-I use mock mayo with no egg
salt and pepper


take the chicken breasts and dice them, place in boiling water and reduce to simmer, cook until done. (you can also chop after cooking if you like)
While cooling chicken, chop grapes in half and the celery into small pieces.
Once chicken is cooled (to a lukewarm or cold) put chicken, grapes and celery in a bowl mix. Add mayonnaise until it coats, usually about 4 tablespoons. You don't want it drippy just enough to cover everything. Salt and pepper to taste.
Put in refrigerator until ready to serve.
