chicken and barley

one pot dish simple and tasty-this recipe makes one serving-I highly recommend organic products


1 skinless boneless chicken breast
1 cup pearl barley (found in chinese groceries)
2 cups chicken broth
1 cup water
corn, peas or vegetables of your choice
seasonings of your choice
salt, pepper to taste


rinse the barley to get the bad seeds out.
put the barley, water, and broth in a pan over high heat and bring to a boil. Dice the uncooked chicken and put in pan. Also add any vegetable that has a longer cooking time.
Reduce heat and simmer for 20 minutes or until barley has softened to your liking and the chicken is well cooked. Add water as needed. You should end up with just a slight amount of broth.
Depending on your vegetable you'll want to add that in so that it has time to cook or you can precook it in the microwave. Frozen veggies can be added when everything is done and heated until warm.
