1 mix of batter is needed
1/2 to 1 tspn ground cinnamon optional
nutmeg to taste optional
2 apples per mix, peeled, centre cored & sliced as thin as cheese or in julienne short strips.
1/4 cup pineapple juice (optional) this stops the apple browning
Take exactly the same mix to enhance the apple. The short way is to mix julienne pieces into the batter & cook as for pancake mix.
The more-ish way is to take an apple slice, dry on paper towels, (helps the batter to stick) dip into the batter & straight into the pan to cook. This version is better served hot with cream or custard garnish. My non egg sensitive family can't stop enjoying this version.
