Pancakes

Egg free simple mix for snacks or desserts - see also Pancake Fritters

Ingredients:

1 cup self raising/allpurpose flour
1/4 tspn bicarbonate of soda
1/2 pint (1 cup) milk or similar
1 oz (1 Tblspn) margarine or oil (Optional)
1 oz (1 Tblspn)Golden Syrup or similar to replace 1 egg
1 tspn to 1 Tblspn sugar (even for savoury type)

Directions:

Put all dry ingredients into a basin & make a well in the centre.
Heat the metal spoon measure in hot water. Pour the milk into the well of dry ingredients & quickly dry the hot spoon, measure the syrup & add to the milk in the bowl.
Now beat the mix on medium speed until all flour is mixed (scrape the bowl just to be sure). The mix may stand in the refrigerator for 1 to 12 hours, it will thicken & enhance flavours. More liquid 1/2 to 3/4 cup may be added for more liquid mix or crepes. Golden Syrup is from the production of sugar, a mix 1:1 or 1:3 of molasses & syrup may be substituted.
Heat frypan or similar & pour a round of batter to test for temperature, mixture should form bubbles that will evetually burst making the batter seemed pockmarked. Using an egg slide or similar flip the batter onto the other side. Remove from the pan when golden brown at underside edge of the batter when you peek at it. Serve with sugar, lemon juice, stewed apples, cream or similar, custard or just plain spread with jam or savoury toppings.
