Helen's Healthy Potato Cakes

Courtesy of Helen M. Chandler This is a very tasty and healthy potato cake recipe.

Ingredients:

Mashed organic potatoes (enough to feed your family)*
4 teaspoons flax seed meal
4 tablespoons warm water
2 tablespoons organic mustard (or to taste)
1/2 cup chopped onions
2 chopped garlic cloves
4 stalks chopped cilantro
Salt and pepper to taste
Water as needed

Directions:

*I sometimes make extra mashed potatoes and save some to make potato cakes for the next meal.

Put flax seed meal and water in blender** and blend until the consistency of eggs (this is the equivalent of two eggs). Add to mashed potatoes and mix thoroughly. Add all the other ingredients to the potato mixture and mix thoroughly. Form patties which can be either fried in the traditional manner or oven fried. Try dipping them in a cornmeal batter first. MMMM. If the mixture is too firm to form patties, add a little water, very little at a time, until the right consistency.

**Be sure to rinse the blender immediately, or at least soak in water. The mixture will be hard to clean out if allowed to set.

TIP: For a good egg substitute in any recipe, 1 teaspoon of flax seed meal to 1 tablespoon warm water blended equals one egg.
