Veggie Side Dish

1 lb new potatoes
1 lb babyport mushrooms
1 medium onion
2 tbs olive oil
1/4 tsp Italian seasoning
Salt and pepper


Par boil potatoes, cool and slice in half. De-stem mushrooms and clean. Slice onion into large quarter chunks. Heat oil, place potatoes cut side down let brown slightly, add onion and mushrooms, do not over cook, let the onions start to become translucent. Salt and pepper to taste add Italian seasoning.

This can also be made with zuchini and summer squash. They can be used as substitutes or all together. Makes a great main veg meal and serves 2-3.
