These potato cakes are easy to make and do not fall apart.
Salt to taste
Oil for frying
Boil the amount of potato required until cooked. Weigh the potato once cooked. Now add cake flour equal to a quarter of the weight of the potato. Add salt to taste, then mash it all together. Chopped parsley can also be added if you wish. Form balls out of the dough, flatten them into cakes and dip in the flour. Fry them in your favorite oil until lightly browned on both sides.
