Chocolate Chip Cookies
An excellent non-dairy cookie - even my husband likes these!
1 c margerine
1 c brown sugar
1/2 granulated sugar
1 tsp vanilla
2-1/4 c flour
3/4 tsp baking soda
1/2 tsp salt
12 ounce package of non-dairy chocolate chips
1 c nuts (optional)
Preheat oven to 350 degrees and grease a couple of cookie sheets. Cream the margerine, sugars and the vanilla well together. Beat in the eggs, one at a time, until the mixture is light and fluffy. Sift the flour, baking soda, and salt together; stir into the batter just until mixed. Stir in chocolate chips (and nuts if you use them).
Drop by tablespoonsful onto cookie sheets and bake about 10 minutes or until lightly browned. Makes about 4 dozen cookies.
