Roasted Garlic Paste
This is a VERY garlicy paste, but if you like garlic, this is for you! Curtesy of www.Emerils.com
4 dozen peeled garlic cloves
Drizzle of olive oil
Preheat oven to 400 degrees. in a mixing bowl, toss the garlic with some of the olive oil. Place garlic on a parchment lined baking sheet (or just an oven safe dish) and roast until golden (about 20 minutes). Remove from oven and cool completely. Puree the garlic in a food processor until smooth. Drizzle in enough oil to make the mixture spreadable. Season with salt and pepper. Cover and refrigerate until ready to use. The paste will keep for up to 1 week.
