Gram flour pancakes

Pancakes made with gram flour (chick peas)

Ingredients:

150 g gram/chickpea flour
350 ml iced water (or milk/half milk, whichever you prefer)
pinch of sugar or salt (optional)
Oil for frying

Directions:

Gradually add iced water to the flour until you get a smooth batter. Heat a little oil in a pan, add a quarter of the batter and cook until the edges are crispy and brown, and the top has dried out. Serve with filling of your choice, eg sugar-free jam.
