Carrot-Sprout Salad

1 cup sprouts, whatever kind you have handy
2 cups grated carrots
1/4 cup parsley, finely chopped
3 tbs lemon juice
2 tbs olive oil
pinch cayenne


Put salad ingredients in serving bowl. Blend dressing ingredients in small bowl. Whisk to blend. Toss dressing and salad and let sit 20 minutes before serving. Serves four.
