Vegetarian Chili

Awesome and easy veggie chili. I use ground soy

Ingredients:

VEGETABLE CHILI

3 tbls. Olive oil
1 large onion, chopped
? red and green peppers, chopped
2-4 cloves of garlic
2 med. Carrots
? broccoli, chopped
4 ? 6 med. Mushrooms, sliced
1 ? 2 med. Zucchini, sliced
1 ? 2 cans tomatoes
1 can corn nibblets
1 can red kidney beans
1 can black beans
2 ? 4 tabls. Chili powder
2-4 teas. Ground cumin
1 teas. Dried basil
? - 1 teas. Cayenne
? cup chopped fresh parsley
2 ? 4 sml. Dried by leaves
1 pkg. Yvee's ?ground meat? Italian style
Optional ? low fat sour cr?me, or shredded cheddar cheese to top off with.


Directions:

1. In a large soup pot, heat oil and cook all vegetables over medium heat, stirring occasionally, until softened. Use either half the amount to all of required spices at this time.
2. Add tomatoes, beans and corn with all liquid and add the rest of the spices or double up and add them all in again. Cook for at least 15 min. and then add the ?ground meat?.
3. Turn heat down to low and cook for another 15 min.
4. Sprinkle with parsley and optional toppings and serve.
