A quick little dish that I can throw together between classes, easy to double/triple, etc for more servings.
2 oz. dry pasta
1/3 cup plain bread crumbs
1/3 cup Mori-nu firm tofu
1/2 cup spaghetti sauce
Cook the pasta as directed on the package and drain.
Put the tofu in a bowl and mash with a fork until broken up and mooshy. Add garlic powder and parsley with a *little* bit of salt to taste.
In the bowl you intend to eat in, layer the pasta, followed by the bread crumbs, the tofu mixture, and finally the sauce.
Cook in the microwave for about one minute, stir and serve.
Makes one serving.
