Andrea's Healthy Cookies

This is a very healthy cookie recipe that is also extremely yummy - even the kids eat it with no idea that it is 'health food' - AND it is a very easy recipe.

Ingredients:

2 cups + 2 tbs of unbleached flour
4 tsp Stevia powder
1/ 2 tsp salt
1/2 tsp baking soda
2 eggs
1/2 cup soy milk or water
1 1/2 cups fat-reduced peanut butter
6 tbs sunflower oil
2 tbs vanilla extract

Directions:

No-sugar added jam or preserve of your choice.

Preheat the oven to 350. Combine the dry ingredients and the moist ingredients separately. Blend the moist ingredients into a smooth paste and gradually add the dry ingredients until you have a pliable dough.

Take a teaspoon of dough at a time and roll it into a ball. Flatten it out slightly on the cookie sheet and make a small well in the center of the cookie. Into this well drop just enough jam or preserve to make a small ball at the bottom (it will melt to fill the well up in the oven).

Bake for 9 minutes. Makes about 50 cookies.
