Stewed Prunes

1 lb dried prunes
4 cups water
1/4 tsp lemon rind
1/2 tsp vanilla


Place everything but the vanilla in the slow cooker, cover, and cook on Low for 10 to 12 hours or overnight. Remove the cover, turn off the heat, and add the vanilla. Turn into a serving bowl and allow to cool to lukewarm before serving. Makes 6 to 8 servings.
