Tempura Batter


1 egg, beaten
1/4 cup cornstarch (or tapioca starch, potato starch, arrowroot starch)
1/2 cup rice flour (sweet-rice flour preferred)
1/4 teaspoon xanthan gum
1/2 teaspoon baking powder
1 cup water


Beat the egg in a small mixing bowl. Mix all dry ingredients together. Whisk into egg mixture, then whisk in water to make a thin batter. Dip seafood or veggies into batter and fry (deep-fry or saut? in hot oil)
