Nutty Seed Bread
1 cup Rice milk + 2 teaspoon vinegar
1/3 cup oil
1 1/2 cups oat flour (or non-wheat flour mix)
1/2 cup sweet rice flour
1 tsp. xanthan or guar gum
1 cup packed brown sugar (reduce if you like, & slightly increase oil)
1/3 cup finely chopped nuts
2 Tablespoons EACH: flax, sesame, sunflower, poppy seeds, or up to 1/2
cup of any one seed
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Omit any of the nuts and seeds if you can't have them or if you want a plain bread. Despite the sugar, it does not have a really sweet taste. Sugar adds moisture - if you reduce it, add a couple tablespoons more oil to compensate. Freeze loaf when cool, as non-wheat breads dry out quickly. Cuts well when frozen.
Combine egg, milk, vinegar and oil in bowl Mix well. Combine all dry ingredients, stirring to blend. Stir them into liquid mixture, mixing well.
Spread batter into 9x5 loaf pan. Bake at 350 for 45 - 55 minutes, until toothpick tests clean. I check the loaf at 40 minutes, don't over bake, as these doughs dry out really quickly.
