Goat Cheese Dip

This makes a great dip for whatever else is in your diet. Precise amounts aren't important (although I will list the amounts I used tonight!) You may like more feta and less chevre, or vice versa. Add any or all or none of the variations, depending on your diet at the moment.

Ingredients:

300 grams chevre (goat cream cheese)
200 grams goat feta
1-2 Tablespoons rice milk

Optional:
salt and freshly ground pepper if your diet allows
Minced herbs, finely minced garlic, green onions, celery, cashews or other nuts, and so on.

Directions:

Using a food processor, blend the feta cheese until very smooth, scraping sides often. Add chevre, blend until smooth. If too thick, thin with a little rice milk. Check for salt and freshly ground pepper if your diet allows. Add any/all/none of the following: Minced herbs, finely minced garlic, green onions, celery, cashews or other nuts, and so on.

Serve with potato crackers, oatcakes, or real crackers if you can eat wheat, fresh veggies, etc.
