Millet/Tahini stuffed collards

Cooked millet/pureed veg/ tahini stuffed in collard greens

Ingredients:

1 Cup Millet
3 cups water
1 small daikon radish
1 leek or several small scallions.
1 cup cooked other vegtables such as carrots.
1/2 cup tahini
several large collard green leaves.
Add your favorite spices. I like Ginger and cardamom, or cinnamon.

Directions:

Cook Millet according to package on stove top.
steam all other vegtables.
When Millet is over-cooked (consitency like oatmeal), add vegtables and 1/4 cup tahini.

Put in blender or food processor or mash so you can stuff this mixture into the steamed collard green leaves.
Roll the above mixture into the leaves. Pour tahini over each one and serve.

Steam several large collard green leaves (set aside) until ready to stuff.
