Peach/Pineapple Cake
Vegan cake with canned peaches
and pineapple added,(or any
other canned fruit)
Ingredients:
3 cups flour
2 cup sugar
1 tsp. salt
2 tsp. baking soda (no baking pwdr)
1 tsp. vanilla extract
3/4 cup oil (safflower best)
2 Tbs apple cider vinegar
1 16oz or 20oz.can sliced peaches
1 16oz or 20oz.can diced or crushed pineapple
(any other canned fruit may be substituted)
(Up to three cans may be used)
Directions:
Beat all ingredients together
with a fork. Drain and measure
canned liquids and add water
if needed for a total of 2
cups. Pour into ungreased
9 x 13 pan. Bake at 350°,
35-45 minutes.
Note: It never really dries
out.It is just super moist
and juicy
