Goat Cheese Dip This makes a great dip for whatever else is in your diet. Precise amounts aren't important (although I will list the amounts I used tonight!) GREEN MOJO (Mojo de Cilantro) This is especially interesting with potatoes, corn (instead of butter) and roasted fresh goat cheese. (Try with tofu!). Also lovely with fish (traditionally we eat much more fresh fish than meat). You can also dress salads and use it with pasta. ~ Submitted by Chet Day

I just love this salsa recipe! I took the one from the food preparation book that came with my Vitamix and modified it a bit. Also, the original recipe makes a LOT, and since it's fresh, it only keeps 1 day in the fridge and even then the taste changes a bit. I usually halve it, and still have leftovers, but it's worth it! The recipe below is what I've worked out for half. ~ Submitted by Chet Day
Nearly satay sauce A medium hot nut-based dipping sauce, mainly for grilled fish & meat, but works well poured over rice & vegetables - or with bananas or other exotic fruit.
Most of he ingredients can be changed - If you can\'t have peanuts, you could probably get away with hazelnut or almond butter. You need unsweetened nut butter like the sort you can make in a blender at home. Pref crunchy, pref no added oil, preferably no added salt (or as little as possible). If the only stuff you can get is smooth, sweetened, salted, and with extra fat, the sauce will still work, but results will be less predictable. ~ Submitted by Ann Onymous

Pear Salsa - Low Salicylate This is a low-sal chunky sauce you can use with plain meat, poultry, etc. Especially nice if you can't have gravy. You can also use part apple along with the pears. You can add a little fresh ginger if you can have it. ~ Submitted by Grace Cockburn
